In the 1990s, after many years of making wine using the inherited knowledge from former generations, Alfredo Santamaría decided to bet on the elaboration of quality wines. It was the beginning of an ambitious project: the construction, near the old underground cellar, of the new facilities for elaboration, aging and bottling, equipped with modern technology, for the vinification of small production of high quality wines, without forgetting the traditional methods. Every year since then, only grapes harvested in their own vineyards are selected for vinification.
- Underground cellar: Equipped with concrete deposits covered with resins. The conditions inside the cellar allow to keep a stable temperature between 8-14 ºC during the whole year.
- New cellar: Built with noble materials (stone, sun-dried brick and wood), with deposits and modern equipment in stainless steel with temperature control.
- Crianza room: The aging room lodges 51 casks of American and French oak. It has a capacity of about 25,000 bottles.
- Bottling room.
The elaboration capacity surpasses the 100,000 bottles, althought the present production is smaller.
